All foods at the seder will be kosher and grape juice will be substituted for the wine that is customarily drunk. How do you know you are ungrounded and uncentered? One of the easiest indications is how easy it is for you to focus on a task. If you find that your mind wanders and you get sidetracked easily, there is a good possibility you are ungrounded. However, having a lot on your mind, juggling many tasks at one time, focusing for long periods, or travelling can all knock you off center.
Now for slow cooking brisket TOMATO CONFIT: cut the skinned tomatoes in half and seed them. Then cut the halves into wedges. At the first sips of this wine I got oak and dark fruit but the wine faded rather quickly. Its first pairing was with slow cooking beef ribs with potatoes in a savory sauce. This Cab was chewy and mouth filling. It was hearty with the taste of black licorice. I also enjoyed a salad composed of carrots, palm hearts, chickpeas, Lebanese cucumbers, red peppers, and canned corn. This fine salad softened and lengthened the wine.
My final meal was a broiled Atlantic salmon steak which was marinated in soy sauce and sliced garlic. This Pinot Noir was quite powerful, well-balanced, round, and long. It tasted of dark fruit and earth. The potato patties didn't change the flavors or the length. Finally a negative note, with a zesty guacamole, this Pinot Noir became more uni-dimensional.
Of course, not everyone is always (or ever) in the mood for such a complicated lunch.
